Dutch Oven Potatoes

     Going into the mountains is one of my favorite things to do. The one thing that makes it better is enjoying good food while you're there! We usually do this in a dutch-oven but it can be easily done in a crock-pot or even a pot over the stove. Depending on how many you will feed, you will need...

about 1/2 lb of good bacon (usually half a package)
2-3 chopped onions
3-4 chopped red potatoes
salt
grated cheese (optional)





 Make sure your briquettes are lit and then put the bacon in the dutch oven. Put the lid on it and put some of the briquettes under and some of them on top of the dutch oven. Add the onions in before the bacon is done. When the bacon is almost cooked, add in the potatoes. It is important not to let too much moisture escape when cooking so be sure to keep the lid on as much as possible. Make sure to fold over the mixture every few minutes to distribute all of the juices equally. When the potatoes are soft (you can stick a fork through them and they easily fall apart), they are ready to eat. Add cheese and salt to taste. I don't eat mine with cheese because of my allergy and it still tastes wonderful. Enjoy! :) This is probably enough for about 3-4 people.
